this may well have been a 5 star review, however the instruction manual is poor and incomplete. Dismantling instructions are vague - how do I remove the blade wiper for cleaning for example - no idea. But if you try to hard you might cut your finger badly. Blade cover - instructions to remove are incorrect or, more likely, poorly written. Blade sharpener instructions provided only in German. Handy. And surely they could have provided a diagram of the item / parts to accompany the manual? Premium piece of kitchen hardware with a very unpremium set of instructions. Reminds me of something that may have come from rather further East.

Just what I need having been given and large piece of prosciutto - it works perfectly and does slice wafer thin. Now I have had the slicer for a month I realised how much time it can save one - sliced 5 k of aubergines into .5cm slices in seconds. Easy to clean - love it.

Bought the Graef M9 specifically to cut Bresaola, Parma ham, Coppa and salami. It does the job perfectly. You can cut as thin as you like slices without a mess. Also used to cut the filet steak slices for Fondue Chinoise. It's very quiet compared to other models and is very easy to clean. It's also been selected as it has the blade sharpening tool to maintain the original cutting performance, although this has not yet had to be used. It's also a beautiful product which looks good on the worktop. Great machine and very pleased with it!
